The ancient Frantoio Oleario Saguato Stefano was founded in 1915 by the passion of Saguato Stefano father of Saguato Pietro and grandfather of Saguato Stefano current owners who respect the tradition continue to devote themselves with seriousness and professionalism to the production of extra virgin olive oil quality and other typical products.

How we process our oil

Processing In the period from November to April, olives are harvested, which in the western Ligurian Riviera are typically "TAGGIASCHE". Once harvested and defoliated the olives are placed in boxes and processed within 24 hours. Then the processing begins. The phases of 'milling' are:


The olives are washed in a special "washing machine"


The pulp is divided into two parts, liquid (high water) and solid (kernel and pulp) pomace


The olives are crushed with special coils of steel


The oil is separated from the water and the typical impurities of the fruit


The obtained pulp is kneaded in stainless steel tanks equipped with rotating blades


The oil produced is stored in underground stainless steel tanks at a constant temperature to maintain its qualities intact.
