Although still little known, the pasta produced in Liguria nevertheless has remote origins: the oldest Italian pasta factory seems to have stood in Savona, in the heart of the Ligurian Riviera. The quality of this pasta derives from the careful selection of the finest grains and from artisan processing with slow, low-temperature drying.
