Processing In the period from November to April, olives are harvested, which in the western Ligurian Riviera are typically "TAGGIASCHE". Once harvested and defoliated the olives are placed in boxes and processed within 24 hours. Then the processing begins. The phases of 'milling' are:
The olives are washed in a special "washing machine"
The olives are crushed with special coils of steel
The obtained pulp is kneaded in stainless steel tanks equipped with rotating blades
The pulp is divided into two parts, liquid (water, oil) and solid (kernel and pulp): pomace
The oil is further centrifuged in order to be further purified from water
The oil produced is stored in underground stainless steel tanks at a constant temperature to maintain its organoleptic qualities intact
